  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (for topping and sauce)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, optional, for garnish
  • ¼ cup reserved pasta water, if needed

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil and 2 tablespoons butter in a large skillet. Sear chicken until golden brown and cooked through. Top with Parmesan to melt.
  3. Boil salted water and cook linguine until al dente; reserve some pasta water before draining.
  4. In the same skillet, sauté garlic in remaining butter, then add heavy cream and Velveeta until smooth.
  5. Stir in mozzarella and Parmesan until the sauce thickens; adjust with reserved pasta water as needed.
  6. Combine cooked linguine with the sauce and serve topped with seared chicken.
