  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Fresh parsley (for garnish)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine ground beef, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, salt, and pepper. Roll into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat and brown the meatballs for about 5-7 minutes. Remove from the pot.
  3. In the same pot, sauté chopped onion, carrot, and celery until softened. Add more minced garlic and cook until fragrant.
  4. Stir in diced tomatoes and broth; bring to simmer.
  5. Add the meatballs back into the pot and simmer for 15-20 minutes until fully cooked.
  6. Stir in heavy cream along with basil, oregano, salt, and pepper; simmer for an additional 5 minutes.
  7. Serve hot garnished with fresh parsley.
