Ingredients

  • Tagliatelle or fettuccine pasta
  • Boneless chicken breast
  • Sliced mushrooms
  • Minced garlic
  • Finely chopped shallot or onion
  • Heavy cream or crème fraîche
  • Grated Parmesan cheese
  • Olive oil or butter
  • Salt & pepper
  • Fresh parsley

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Season the chicken breast with garlic powder, dried Italian herbs, salt, and black pepper.
  3. In a skillet over medium heat, add olive oil and sear the seasoned chicken until golden brown and cooked through. Let rest before slicing.
  4. In the same skillet, sauté shallots and garlic until fragrant. Add sliced mushrooms and cook until soft.
  5. Pour in heavy cream (or crème fraîche) and simmer before stirring in grated Parmesan cheese until melted.
  6. Toss the cooked pasta with the creamy mushroom sauce to coat evenly.
