  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • ½ tsp Italian seasoning
  • Crushed red pepper flakes, to taste
  • Rigatoni pasta

Instructions

  1. Cook rigatoni in salted boiling water until al dente (10–11 minutes). Reserve ½ cup pasta water, then drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, melt butter with olive oil; sear chicken for 7–8 minutes until golden brown, adding half the garlic in the last minute.
  4. Remove chicken; in the same skillet, sauté remaining garlic for 30 seconds.
  5. Add heavy cream and simmer for 2–3 minutes until thickened.
  6. Stir in mozzarella and Parmesan until smooth; mix in cooked rigatoni and reserved water as needed for desired consistency.
  7. Serve topped with chicken and garnish with parsley.
