  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups cracker crumbs (like Ritz or Keebler Club)
  • 1/4 cup melted butter

Instructions

  1. Thaw broccoli florets if frozen. Microwave for about 5 minutes, drain thoroughly, and chop into bite-sized pieces.
  2. In a mixing bowl, combine broccoli, 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt. Spoon into a greased baking dish and top with remaining cheese.
  3. In another bowl, mix cracker crumbs with melted butter until moistened. Sprinkle evenly over the casserole.
  4. Preheat oven to 350°F (175°C) and bake for 45-50 minutes until bubbly and golden brown.
