  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped toasted pecans
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Toast pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant.
  3. In a large bowl, cream together softened butter, white sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla; mix until combined.
  5. In a separate bowl, combine flour, salt, baking powder, and baking soda; then gradually add to the wet mixture without overmixing.
  6. Fold in the oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
  7. Chill dough for at least one hour.
  8. Scoop dough onto prepared baking sheets leaving space between each cookie.
  9. Bake for 12–14 minutes until edges are golden but centers remain slightly shiny.
