  • 1 oz Unsalted Butter
  • 250 grams Granulated Sugar
  • 90 grams Dutch Cocoa Powder
  • 2 oz Vegetable Oil
  • 1 oz Light Corn Syrup
  • 1 Tablespoon Pure Vanilla Extract
  • 1 Large Egg Yolk
  • 1 Large Egg (room temp)
  • 1/8 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Cornstarch/Cornflour
  • 60 grams All-Purpose Flour
  • 2 oz Chocolate (chips or chopped bars)
  • For Ganache: 12 oz Chocolate and 6 oz Heavy Whipping Cream

Instructions

  1. Preheat your oven to 350°F (180°C). Line a 9×13 inch baking pan with parchment paper.
  2. In a large saucepan over medium heat, combine water, butter, sugar, corn syrup, and cocoa powder. Cook for about 2–3 minutes until well mixed. Remove from heat and cool for about 5 minutes.
  3. Stir in vegetable oil, vanilla extract, egg yolk, and whole egg until fully combined.
  4. Add baking soda, salt, and cornstarch; mix well. Gently fold in flour and chocolate chips until just combined.
  5. Pour the batter into the prepared pan and bake for 14–18 minutes or until a toothpick comes out with moist crumbs. Cool completely before cutting into bars.
