  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 2 medium carrots, diced
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 15 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 4 cups chicken broth
  • 15 oz can Great Northern beans, rinsed and drained
  • 15 oz can Kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Cook the ground beef for 3 to 5 minutes, stirring regularly. Drain excess fat and set aside.
  2. In the same pot, sauté diced carrots, onion, celery, and minced garlic for about 3 to 4 minutes until softened.
  3. Add diced tomatoes and tomato sauce back into the pot with the cooked beef. Stir to combine.
  4. Mix in rinsed beans and chicken broth; bring to a simmer for 10 minutes.
  5. Add ditalini pasta, Italian seasoning, salt, and black pepper; simmer for an additional 10 minutes until pasta is tender.
  6. Stir in fresh basil before serving hot.
