Ingredients

Scale
  • 1 tbsp olive oil
  • 6 sausages (chicken, beef, or turkey, about 14 oz total)
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice (about 3.5 oz)
  • 3 medium potatoes, peeled and chunked
  • 1 1/2 cups light cream or half-and-half (12.5 fl oz)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, sliced celery, and carrots for 5 minutes until softened.
  2. Add sliced sausages and cook until browned (7–10 minutes).
  3. Stir in minced garlic and dried thyme; cook for 1 minute until fragrant.
  4. Sprinkle flour over the mixture; cook for 2 minutes to eliminate raw taste.
  5. Gradually add broth while stirring; include bay leaves.
  6. Bring to a boil; add wild rice and potatoes, reduce heat to low, cover, and simmer for 30 minutes until rice is tender.
  7. Remove bay leaves, stir in light cream or half-and-half, and season with salt to taste before serving.
