  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 2 cups savoy cabbage (or kale), chopped
  • 1/2 cup green onions, sliced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare the vegetables by washing and peeling them. Dice the potatoes, chop the onions and carrots, and mince the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent, then add garlic and carrots, cooking until softened.
  3. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
  4. Stir in the chopped savoy cabbage (or kale) and green onions. Cook for an additional 5–7 minutes until greens are wilted.
  5. Blend the soup using an immersion blender or by transferring batches to a traditional blender until smooth.
  6. Return blended soup to the pot if using a traditional blender. Season with salt and black pepper to taste.
  7. Serve hot in bowls; garnish with extra green onions if desired.
