  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp pure vanilla extract

Instructions

  1. Blend instant coffee into a fine powder using a food processor. In a bowl, sift together flour, baking soda, baking powder, salt, ground cinnamon, and blended coffee.
  2. In a separate large bowl, mix melted butter, brown sugar, white sugar, vanilla extract, and eggs until combined.
  3. Slowly incorporate dry ingredients into wet mixture using a rubber spatula. Gently fold in chocolate chips.
  4. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
  5. Scoop dough onto prepared sheets and bake for 12-14 minutes until edges are golden brown.
