  • 1.5 cups crushed chocolate sandwich cookies

  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons instant espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line with parchment.
  2. Mix crushed cookies and melted butter until combined. Press into the bottom of the pan and bake for 10 minutes; let cool.
  3. Beat cream cheese, sugar, and cornstarch until smooth. Add eggs one at a time, mixing on low speed.
  4. In another bowl, whisk together heavy cream, sour cream, espresso powder, and vanilla. Gradually mix into batter.
  5. Pour batter over cooled crust. Bake in a water bath for 50-55 minutes until edges are set but center jiggles slightly.
  6. Cool in the oven with the door ajar for an hour before refrigerating for at least 6 hours or overnight.
