  • 1/4 cup unsalted butter (cold, for streusel)
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine melted butter, milk, eggs, and vanilla; mix well.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Prepare the streusel by mixing flour, brown sugar, and cinnamon; add cold butter pieces and mix until crumbly.
  6. Fill muffin cups about 2/3 full with batter and sprinkle streusel on top.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
