  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • Salt and black pepper to taste

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium-high heat. Sear the beef chunks until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onions until translucent, then add minced garlic and grated ginger, cooking until fragrant.
  3. Stir in curry powder, turmeric, cinnamon, salt, and pepper to coat the aromatics.
  4. Return the beef to the pot along with coconut milk and beef broth; mix well.
  5. Bring to a gentle simmer, cover, and cook on low for 2-3 hours until the beef is tender enough to shred easily.
