  • 2 lbs beef chuck (cut into 2-inch cubes)
  • 2 tbsp vegetable oil
  • 1 large onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • Juice of 1 lime

  1. Heat vegetable oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides, about 5 minutes per batch. Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for an additional minute.
  3. Stir in red curry paste and spices; cook for about 2 minutes until fragrant.
  4. Return seared beef to the pot, pour in coconut milk and beef broth, and add lime juice. Stir to combine.
  5. Bring to a simmer, cover, and cook on low heat for at least 2 hours until beef is tender.
