  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Gather all ingredients; chop onion, mince garlic, grate ginger, and cut beef into large chunks if necessary.
  2. In a heavy-bottomed pot or Dutch oven, heat coconut oil over medium heat. Sauté onion until translucent; add garlic and ginger, cooking until fragrant.
  3. Stir in curry powder, turmeric, cumin, smoked paprika, and cayenne (if using). Add tomato paste and mix well.
  4. Increase heat to medium-high and brown beef in batches for about 5-7 minutes per batch. Remove browned beef and set aside.
  5. Return all beef to the pot; pour in coconut milk and beef broth. Stir to combine.
  6. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 2-3 hours until beef is fork-tender.
