  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric (optional)
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef or chicken broth
  • Juice of lime
  • Fresh cilantro for garnish

Instructions

  1. Prepare ingredients by chopping onion, mincing garlic, and grating ginger.
  2. Heat oil in a large pot over medium-high heat. Season beef with salt and pepper, sear until browned on all sides, then set aside.
  3. In the same pot, sauté onion until translucent. Add garlic and ginger; cook until fragrant.
  4. Stir in curry powder, cumin, coriander, and turmeric; toast for about 1 minute.
  5. Return beef to the pot with coconut milk and broth; stir well.
  6. Bring to a boil then reduce heat; cover partially and simmer for about 1.5 hours until tender.
