  • 14.5 oz rotini pasta (tri-colored or plain)
  • 1 red pepper (seeded and chopped)
  • 1 green pepper (seeded and chopped)
  • 1/4 cup freshly shredded carrots (12 carrots)
  • 3.8 oz sliced olives
  • 1/4 cup dried or fresh chopped parsley
  • 16 oz Italian dressing (or make your own)
  • Sea salt and pepper to taste
  • 1/2 cup Parmesan cheese (shredded or grated)

Instructions

  1. Boil water in a large pot and cook the rotini pasta according to package directions until al dente. Drain and cool in a mixing bowl.
  2. While the pasta cooks, chop the red and green peppers, shred the carrots, and prepare the olives and parsley.
  3. Once the pasta has cooled, combine it with the chopped vegetables in the mixing bowl.
  4. Pour Italian dressing over the mixture and season with salt and pepper to taste. Mix well.
  5. Chill in the refrigerator for at least 2 hours before serving. Just before serving, sprinkle with Parmesan cheese.
