  • Olive oil
  • Kosher salt
  • Coarse black pepper
  • Oxtails or meaty beef bones
  • Low-sodium beef stock
  • Dry apple vinegar
  • Fresh garlic
  • Seasonal vegetables (carrots, celery, onion)

Instructions

  1. Take the beef rib roast out of the refrigerator 1 hour before cooking. Preheat your oven to 450°F (232°C).
  2. Rub the roast with olive oil, salt, and pepper.
  3. Place in a roasting pan bone side down and roast for 20 minutes. Reduce the temperature to 325°F (163°C) and continue roasting until a meat thermometer reads 130°F (54°C) for medium rare.
  4. While the roast rests, prepare the au jus by simmering oxtails or meaty bones with beef stock, apple vinegar, garlic, chopped vegetables, and seasonings for about an hour.
  5. Slice the rested prime rib and serve with au jus and your choice of sides.
