  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon for the filling.
  3. In a separate bowl, combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Cream cold butter and granulated sugar until fluffy in a stand mixer; add eggs and vanilla.
  5. Gradually add dry ingredients to wet mixture until combined.
  6. Shape dough into a rectangle on a floured surface, spread filling evenly on top, then roll into a log.
  7. Cut dough into 10-12 equal pieces and bake for 9-11 minutes until edges are golden.
  8. For frosting, blend cream cheese and butter; gradually add powdered sugar until smooth.
  9. Frost cooled cookies generously.
