  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 bunch fresh cilantro (chopped)
  • 4 peaches (cored and diced)
  • 1 sweet red bell pepper (diced)
  • 1/4 cup red onion (diced)
  • 3 green onions (diced)
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 teaspoon chili powder (or more)
  • 1/3 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Sriracha
  • 1 lime (medium size, freshly squeezed)
  • 8 tortillas (yellow or white corn tortillas or flour tortillas)
  • fresh cilantro (chopped)

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken with smoked paprika, chili powder, salt, and pepper. Cook for about 5–7 minutes on each side until fully cooked.
  2. In a bowl, mix diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, salt, and pepper to create the peach salsa.
  3. For the cilantro-lime crema, whisk together Greek yogurt, mayonnaise, Dijon mustard, Sriracha, lime juice, and chopped cilantro until smooth.
  4. Warm the tortillas in a skillet and assemble by layering sliced chicken and peach salsa on each tortilla. Drizzle with crema before serving.
