  • 1.5 lbs boneless, skinless chicken breasts
  • 1 medium white onion, finely diced
  • 3 cloves garlic, minced
  • 1/3 cup Aji Amarillo paste
  • 1 cup evaporated milk
  • 4 slices white sandwich bread (crusts removed) or 1 cup crushed saltine crackers
  • 2 cups chicken broth (reserved from poaching chicken)
  • 1/4 cup chopped pecans

Instructions

  1. Poach the chicken by covering it with water or chicken broth in a pot. Bring to a boil, then simmer until fully cooked (15-20 minutes). Remove and shred the chicken.
  2. In a separate pot, sauté diced onion in oil until translucent (5-7 minutes). Add minced garlic and Aji Amarillo paste; stir for 2 minutes.
  3. Soak bread or crackers in evaporated milk and some reserved broth. Blend until smooth.
  4. Combine the blended mixture with the onion mixture in the pot; stir until thickened.
  5. Add shredded chicken and chopped pecans; season with salt and pepper to taste. Simmer for another 5 minutes before serving.
