  • 2 tbsp vegetable oil
  • 10 oz raspberries (fresh or frozen)
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 9 oz cream cheese (room temperature)
  • 1/2 cup powdered sugar
  • 1 cup whipping cream (chilled)
  • 9 oz fresh raspberries
  • 6 oz white chocolate
  • 1/4 cup whipping cream
  • Pinch of salt
  • Fresh raspberries for garnish
  • Star anise for garnish
  • Fresh rosemary for garnish
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking powder, and salt. In another bowl, whisk eggs until frothy, then add sugar gradually until thickened. Stir in vanilla and oil before folding in dry ingredients.
  3. Pour the batter onto the prepared sheet and bake for about 10 minutes until lightly golden.
  4. For the raspberry filling, combine raspberries, sugar, and lemon juice in a saucepan over medium heat for about 5–7 minutes until slightly thickened.
  5. Beat cream cheese with powdered sugar and vanilla until smooth for the cream cheese filling.
  6. Once the cake is cool, spread the cream cheese filling evenly over it, then spoon raspberry filling on top. Roll carefully using parchment paper as support.
  7. Chill for at least an hour before serving.
