  • 1 tablespoon molasses
  • 2 cups all-purpose flour (250 g)
  • 1/2 cup unsweetened cocoa powder (45 g), sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dark or semi-sweet chocolate chips (170 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the butter, dark brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and molasses; mix until combined.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add this to the wet mixture.
  5. Fold in the chocolate chips until evenly distributed.
  6. Scoop tablespoons of dough, roll into balls, then roll each ball in granulated sugar before placing them on the baking sheet.
  7. Bake for about 10 minutes or until the edges are set but centers remain soft.
  8. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.
