  • 55 g light brown sugar
  • 65 g granulated sugar
  • 1 tsp vanilla extract
  • 65 g plain flour (all-purpose)
  • 15 g cocoa powder
  • 1 tsp baking powder
  • ½ tsp espresso powder
  • ¼ tsp salt
  • 75 g dark chocolate (melted)
  • 2¼ tsp powdered vegan gelatin
  • 45 ml fresh lemon juice
  • 400 g fresh raspberries
  • 100 g granulated sugar
  • 480 ml cold heavy cream
  • 125 g fresh raspberries
  • 50 g dark chocolate shavings

Instructions

  1. Preheat oven to 180°C (350°F). Grease a 9-inch baking pan and line with parchment paper.
  2. In a bowl, whisk together eggs, light brown sugar, and granulated sugar until fluffy. Add vanilla extract.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
  4. Incorporate melted dark chocolate carefully to maintain airiness. Pour batter into prepared pan and bake for 20 minutes or until a toothpick comes out clean.
  5. For the mousse, bloom gelatin in lemon juice for about 5 minutes. Blend raspberries with sugar until smooth; strain if desired.
  6. Whip cold heavy cream until stiff peaks form and gently fold in raspberry puree and bloomed gelatin.
  7. Once the sponge cools, pour raspberry mousse over it and refrigerate for at least 4 hours to set.
