  • 1 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp fine salt
  • 1 cup all-purpose flour
  • 1 cup mashed overripe banana – about 2 large bananas
  • 3/4 cup chocolate chips, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, cream together softened butter and brown sugar until fluffy. Add the egg and vanilla; mix well.
  3. In another bowl, whisk together flour and salt, then gradually combine with wet ingredients.
  4. Fold in mashed bananas and chocolate chips until evenly mixed.
  5. Pour batter into the prepared pan, spreading it evenly. Bake for approximately 35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before cutting.
