  • 1 ripe avocado
  • 1 cup cooked chickpeas
  • 1 cucumber
  • 1 cup cherry or grape tomatoes

Instructions

  1. Boil the eggs for 9-10 minutes in a pot of water. Transfer to an ice bath to cool before peeling.
  2. Chop the cucumber into bite-sized pieces and slice the avocado and tomatoes.
  3. Layer mixed greens at the bottom of a serving bowl, then arrange chickpeas, cucumber, tomatoes, avocado, and halved eggs on top.
