  • 300g chicken breast, cut into strips
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1 cup sliced mushrooms
  • 1 cup sliced carrots
  • 1 cup sliced green bell pepper
  • 2 garlic cloves, minced
  • 1 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • ½ cup chicken stock
  • Salt & pepper to taste
  • 1 cup cooked white rice
  • Fresh cilantro, chopped

Instructions

  1. Marinate chicken strips in soy sauce, cornstarch, and sesame oil for about 10 minutes.
  2. Mix together soy sauce, rice vinegar, honey, chicken stock, salt, and pepper in a small bowl for the sauce.
  3. Stir-fry marinated chicken in vegetable oil over medium-high heat until lightly browned (about 5-6 minutes) and set aside.
  4. In the same wok, stir-fry minced garlic with carrots, mushrooms, and green bell pepper for about 3-4 minutes until tender-crisp.
  5. Return chicken to the wok and pour in the prepared sauce. Stir until evenly coated.
  6. Serve hot over cooked white rice.
