  • 12 oz pasta (fettuccine, penne, or your favorite type)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup chicken broth (as substitute for Marsala apple vinegar)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil. Season chicken pieces with salt and pepper; cook until golden brown on all sides (about 5–7 minutes). Remove chicken from skillet.
  3. In the same skillet, sauté sliced mushrooms until golden brown (4–5 minutes), then add minced garlic and cook for another minute.
  4. Pour in chicken broth and Marsala apple vinegar; return chicken to the skillet and simmer for about 5 minutes.
  5. Slowly stir in heavy cream and let it thicken slightly before adding Parmesan cheese and thyme.
  6. Toss the cooked pasta into the skillet until well coated in sauce. Garnish with chopped parsley before serving.
