  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • Salt and pepper to taste

Instructions

  1. Cook rice in salted water until tender (about 15 minutes).
  2. Heat olive oil in a large skillet over medium-high heat. Sauté chicken with salt and pepper until golden brown (5-7 minutes). Remove and set aside.
  3. In the same pan, add sesame oil, onions, and garlic; sauté until fragrant (1-2 minutes).
  4. Add broccoli and mushrooms; continue cooking until tender-crisp (3-4 minutes).
  5. Return chicken to the pan. Add soy sauce and stir well.
  6. Mix cornstarch with water; add to the pan while stirring until the sauce thickens.
