  • 8 bone-in, skin-on chicken thighs
  • Water (enough to cover chicken)
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 4 celery stalks, diced
  • 1 cup pearl couscous
  • Fresh herbs (parsley, dill)
  • 1 lemon, juiced
  • Seasoning salt (to taste)

Instructions

  1. Place the chicken thighs in a large pot and cover with water. Bring to a boil over medium heat, then reduce to low and simmer until cooked through.
  2. In another pan, heat olive oil over medium heat. Sauté diced onion and celery until softened.
  3. Once the chicken is cooked, remove it from the pot and set aside to cool slightly. Strain the broth if necessary, returning it to the pot with sautéed vegetables.
  4. Stir in your favorite seasoning salt and pearl couscous. Cook according to package instructions until tender.
  5. Shred the cooled chicken into bite-sized pieces and add back to the pot along with chopped dill and lemon juice. Season with salt and pepper.
  6. Serve hot, garnished with extra dill and a drizzle of olive oil.
