  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • Fresh thyme, black pepper, and salt to taste
  • 2 cups all-purpose flour
  • 1 tablespoon, plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (optional)
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a heavy-bottomed pot, melt butter over medium-high heat. Add onions, carrots, and celery; cook until softened. Stir in garlic.
  2. Add flour, stirring constantly for one minute. Gradually pour in evaporated milk and chicken stock while stirring until combined.
  3. If using raw chicken, add an extra cup of broth and simmer for 20 minutes until cooked through. Shred the chicken and return it to the pot.
  4. For pre-cooked chicken, bring to a boil after adding it along with seasonings; then lower the heat to simmer while preparing the dumplings.
