  • 1 pound chicken breast, thinly sliced into bite-sized pieces
  • 7 cups broccoli florets (465 grams/about 2 heads)
  • 1/2 cup + 2 tablespoons chicken broth (plus more for cooking if desired)
  • 1/2 cup coconut aminos
  • 3 tablespoons lime juice
  • 1 tablespoon toasted sesame oil
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon tapioca flour
  • Salt and pepper, to taste
  • Optional toppings: sesame seeds, green onions, cilantro
  • For serving: white rice, cauliflower rice

Instructions

  1. In a small bowl, whisk together coconut aminos, ½ cup chicken broth, lime juice, sesame oil, garlic, ginger, red pepper flakes, and pepper. In another bowl, mix 2 tablespoons of broth with tapioca flour until smooth.
  2. Heat olive oil in a large skillet over medium heat. Cook sliced chicken in batches until golden brown; remove from pan.
  3. Sauté broccoli with salt and pepper in the same pan until tender-crisp; set aside.
  4. Lower heat and add the sauce mixture and slurry to the pan. Stir until thickened (3-5 minutes).
  5. Return chicken and broccoli to the skillet; mix gently until heated through.
  6. Serve topped with optional sesame seeds or green onions over rice or cauliflower rice.
