  • 4 tablespoons extra-virgin olive oil, divided
  • 2 oz mozzarella cheese, shredded (about 1/2 cup)
  • 1 oz Parmesan cheese, finely shredded (about 1/2 cup)
  • Kosher salt
  • 1/4 teaspoon crushed red pepper flakes, plus more for serving
  • 2 tablespoons fresh basil, torn

Instructions

  1. Slice zucchinis in half lengthwise to create 'steaks' and score the flesh side. Sprinkle with kosher salt and let sit for 15 minutes.
  2. In a skillet over medium heat, sauté chopped garlic and crushed red pepper in 2 tablespoons of olive oil until fragrant (1-2 minutes). Set aside.
  3. Pat zucchini dry and sear flesh-side down in the same skillet with 1 tablespoon of olive oil until golden (2-3 minutes). Transfer to a baking sheet.
