  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • Olive oil for cooking

  1. In a large skillet over medium heat, warm olive oil. Sauté diced onion for 3-4 minutes until translucent; add minced garlic and cook for an additional minute.
  2. Add ground beef to the skillet, breaking it up as it cooks until browned (5-7 minutes). Drain excess fat if needed.
  3. Stir in black beans, diced tomatoes, and taco seasoning; simmer for 5 minutes. Season with salt and pepper.
  4. Boil salted water in a pot; cook cheese tortellini according to package instructions (3-5 minutes). Drain.
  5. Combine cooked tortellini with beef mixture in a mixing bowl.
  6. Preheat oven to 350°F (175°C). Spread a layer of enchilada sauce in a greased baking dish; pour in tortellini mixture.
  7. Top with remaining enchilada sauce and sprinkle with cheddar cheese.
  8. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly.
