  • 8 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a jelly roll pan by lining it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, and salt; set aside.
  3. In a large bowl, beat eggs with granulated and brown sugar until thick and creamy. Add vanilla extract.
  4. Gradually mix in the dry ingredients until just combined. Fold in grated carrots.
  5. Spread batter evenly in the prepared pan and bake for 10-12 minutes or until springy to touch.
  6. After removing from the oven, invert onto a powdered-sugar-dusted towel and roll up while warm; let cool completely.
  7. Beat softened cream cheese with powdered sugar and vanilla until smooth.
  8. Unroll the cooled cake gently, spread frosting evenly across the surface, then re-roll without the towel. Refrigerate before slicing.
