  • 12 cups cubed French bread
  • 3 pears, peeled and diced
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 2 tbsp ground cardamom (divided)
  • 2 tbsp brown sugar
  • ½ cup sugar
  • ½ tsp kosher salt
  • 10 cardamom pods
  • 1 ½ cups sugar (for cardamom syrup)
  • ¼ cup water
  • 6 tbsp butter
  • ¼ cup orange juice
  • zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, melt butter and add cubed bread, diced pears, brown sugar, 1 teaspoon cardamom, eggs, milk, heavy cream, sugar, and salt. Mix until well combined.
  3. Pour into a greased baking dish and sprinkle remaining cardamom on top.
  4. Bake for about 60 minutes or until golden brown.
  5. For optional cardamom syrup: Simmer water, sugar, butter, orange juice, zest, and remaining cardamom pods until dissolved. Drizzle over pudding before serving.
