  • 750 g red onions, finely chopped
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp ground allspice
  • 1/2 tsp chilli flakes
  • 250 g light brown sugar
  • 250 mL red apple vinegar
  • 90 mL balsamic vinegar

Instructions

  1. In a large saucepan over medium-high heat, heat the vegetable oil and add the chopped red onions. Sauté for about 10 minutes until softened and translucent.
  2. Stir in the salt, black pepper, allspice, and chili flakes; cook for an additional two minutes until fragrant.
  3. Add the light brown sugar, red apple vinegar, and balsamic vinegar to the onions. Stir well and bring to a boil.
  4. Lower the heat and simmer for about 20 minutes until the chutney thickens and turns dark.
  5. Pour the hot chutney into sterilized jars while warm and seal tightly.
