  • 2 tablespoons butter
  • 2 cloves garlic (crushed)
  • 1 tablespoon fresh parsley (chopped)
  • 56 fresh mozzarella balls (sliced thinly)
  • 1 cup grape or cherry tomatoes (sliced thinly)
  • 1/4 cup balsamic vinegar
  • Fresh basil (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the butter, crushed garlic, and chopped parsley.
  3. Place cleaned Portobello mushrooms on a baking sheet and brush with the garlic butter mixture.
  4. Layer sliced mozzarella inside each mushroom cap and top with sliced tomatoes.
  5. Drizzle balsamic vinegar over the stuffed mushrooms.
