  • 1 ⅓ cups water (divided)
  • 3 envelopes unflavored powdered vegan gelatin (about 7 ½ teaspoons)
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup
  • 1 teaspoon peppermint extract
  • ¼ teaspoon kosher salt
  • 12 teaspoons red food coloring
  • ⅓ cup powdered sugar or cornstarch (for rolling)

Instructions

  1. Grease a 9×9-inch baking pan with cooking spray and set aside.
  2. In the stand mixer bowl, add ⅔ cup cold water and sprinkle the unflavored vegan gelatin on top; let bloom for about five minutes.
  3. In a medium saucepan over medium-high heat, combine granulated sugar, corn syrup, and remaining water. Stir until dissolved and bring to a boil until it reaches exactly 240°F on a candy thermometer (about 10-12 minutes). Remove from heat.
  4. With the mixer on low speed, slowly pour the hot sugar mixture into the bloomed gelatin mixture. Add peppermint extract and salt.
  5. Increase speed to high and whip until stiff peaks form (about 10-12 minutes).
  6. Drizzle red food coloring on top and swirl gently for decoration.
  7. Allow to set at room temperature for at least four hours or refrigerate for two hours.
  8. Dust your work surface with powdered sugar or cornstarch and cut into desired pieces.
