Instructions

  1. In a large bowl, whisk together buttermilk, eggs, and vanilla extract until well combined. Set aside.
  2. In another large bowl, whisk together flour, baking powder, baking soda, salt, and granulated sugar until evenly mixed.
  3. Gradually add the dry ingredients into the wet mixture. Mix until just combined; be careful not to overmix—the batter should remain slightly lumpy.
  4. Gently fold in 1/4 cup of vegetable oil into the batter until incorporated.
  5. Heat about 2 inches of vegetable oil in a heavy-bottomed pot or deep fryer until it reaches 350°F (175°C). Use a candy thermometer to keep an eye on the temperature.
