  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. In a mixing bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Mix in water and vinegar until just combined; form into a disk and chill for at least 30 minutes.
  3. Melt cold butter in a saucepan until golden brown; set aside.
  4. In another bowl, combine peaches, strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt.
  5. Preheat oven to 375°F (190°C). Roll out half the dough to fit your pie dish and fill it with the fruit mixture.
  6. Roll out the remaining dough for the top crust or create a lattice design; sprinkle with Turbinado sugar if desired.
  7. Bake for about 70 minutes until golden brown. Cool before serving.
