  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese (3 × 8 oz blocks), softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup granulated sugar (for caramel)
  • 3 tbsp unsalted butter (for caramel)
  • ¼ cup heavy cream (for caramel)

Instructions

  1. Preheat the oven to 325°F (163°C). Line a 9" springform pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press firmly into the bottom of the pan and bake for 10 minutes. Let cool.
  3. Beat together cream cheese and 1 cup sugar until smooth. Add sour cream and vanilla; mix well. Blend in eggs one at a time.
  4. Pour filling over cooled crust and bake for 45–50 minutes until edges are set but center is slightly wobbly. Cool at room temperature before refrigerating for at least 4 hours.
  5. For the caramel, melt ½ cup sugar in a saucepan over medium heat until amber. Stir in butter, then whisk in heavy cream until smooth. Allow to cool slightly before drizzling over chilled cheesecake.
