  • 1 cup salted butter
  • 1 cup milk
  • 1¼ cups golden raisins
  • 1¼ cups regular raisins
  • ¾ cup chopped dried pitted dates
  • ½ cup currants
  • 1 cup candied orange or lemon peel
  • 1â…“ cups chopped walnuts
  • 2 cups all-purpose flour
  • 2½ teaspoons pumpkin pie spice
  • ¾ teaspoon baking soda
  • ¾ cup golden syrup or light corn syrup
  • 2 extra-large eggs
  • 5 tablespoons apple juice

Instructions

  1. Preheat your oven to 300°F (150°C) and line a 9-inch round cake tin with parchment paper.
  2. In a large saucepan, combine milk, golden syrup, butter, dates, golden raisins, raisins, currants, and candied peel. Heat gently until the butter melts; cool to room temperature.
  3. In another bowl, sift together flour, pumpkin pie spice, and baking soda; add chopped walnuts.
  4. Once the fruit mixture is cool, mix in eggs one at a time. Gradually fold in the dry ingredients until just combined.
  5. Pour batter into the prepared tin and smooth the top. Bake for about 2 to 2½ hours or until a skewer comes out clean.
  6. While warm, poke holes in the top and drizzle with apple juice; cool completely in the tin before removing.
