  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter, melted (or coconut oil)
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon.
  3. Stir in melted butter (or coconut oil) and vanilla extract until crumbly.
  4. Press half of the mixture into the baking pan for the base.
  5. In another bowl, combine blueberries, granulated sugar, and cornstarch; spread over the oat base.
  6. Crumble remaining oat mixture on top and gently press down.
  7. Bake for 35-40 minutes until golden brown and bubbly.
  8. Cool completely before lifting out and cutting into squares.
