  • 1/4 cup sour cream
  • 1 teaspoon vanilla bean paste
  • 2/3 cup frozen wild blueberries
  • 3 cups powdered sugar
  • 1/4 cup + 23 tablespoons whole milk
  • 1/4 cup freeze-dried blueberry powder
  • 1 teaspoon blueberry emulsion or extract

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  2. In a large bowl, combine sugar, melted butter, buttermilk, egg, sour cream, and vanilla until smooth.
  3. Fold dry ingredients into wet ingredients until just combined; gently fold in frozen blueberries. Refrigerate dough for 30 minutes.
  4. Heat oil in a Dutch oven or heavy-bottomed pot to 355°F.
  5. Scoop dough using a spring-loaded scoop; fry until golden brown on each side (about 3 minutes). Drain on wire rack.
  6. For the glaze: Whisk powdered sugar, freeze-dried blueberry powder, milk, and blueberry extract until smooth; warm if needed.
  7. Dip each donut in glaze before placing it back on the wire rack to set.
