  • 200g Biscoff cookies (about 26 cookies)
  • 6 tbsp unsalted butter, melted (85g)
  • 32 oz full-fat cream cheese, room temperature (4 8oz blocks or 907g)
  • 1 cup granulated sugar (200g)
  • 4 large eggs, room temperature
  • 1/3 cup heavy cream, room temperature (80g)
  • 1/2 cup sour cream, room temperature (120g)
  • 1 tbsp cornstarch
  • Salted caramel sauce made from:
  • 1 cup granulated sugar (200g)
  • 5 tbsp unsalted butter (70g)
  • 1/2 cup heavy cream, warmed (120g)
  • 1 tsp vanilla extract
  • 1 tsp salt

Instructions

  1. Prepare salted caramel sauce by melting sugar in a saucepan until amber. Stir in butter and then gradually add warmed heavy cream. Add vanilla and salt, then cool.
  2. Preheat oven to 325°F (160°C) and prepare a springform pan.
  3. Crush Biscoff cookies and mix with melted butter; press into the bottom of the pan.
  4. In a bowl, beat cream cheese until smooth. Gradually add sugar, eggs one at a time, then stir in sour cream, heavy cream, vanilla, and cornstarch.
  5. Pour half of the cheesecake mixture over the crust; drizzle with salted caramel sauce. Add remaining filling on top.
  6. Bake for about 60-75 minutes until edges are set but center jiggles slightly.
  7. Cool in the oven with door ajar for an hour; refrigerate overnight before serving.
