  • 5 tablespoons unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Dash of salt
  • 1 cup white chocolate chips or chunks
  • ½ cup cold butter
  • 1/3 cup + 2 tablespoons white sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract (optional)
  • 1 ½ cups all-purpose flour
  • Heaping ¼ teaspoon baking soda
  • Heaping ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips + 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl for the brownie layer, mix granulated sugar and butter until blended. Add cocoa powder and combine. Beat in egg and vanilla extract; stir in flour, baking powder, and salt. Fold in white chocolate chips.
  3. For the cookie layer, cream cold butter with both sugars until fluffy. Mix in egg and optional vanilla extract. Gradually add flour with baking soda and salt; fold in semi-sweet chocolate chips.
  4. Grease a 9×13 inch baking pan or line with parchment paper. Spread brownie batter evenly on the bottom; spoon cookie dough on top.
  5. Bake for about 25 minutes or until a toothpick comes out mostly clean.
