  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth (low-sodium)
  • 1 can (15 oz) red kidney beans, drained & rinsed
  • 1 can (15 oz) black beans, drained & rinsed

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for about 3–4 minutes until soft.
  2. Add minced garlic and cook for an additional 30 seconds until fragrant.
  3. Incorporate ground beef, breaking it up as it cooks until browned (5–7 minutes). Drain excess fat if needed.
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for 1 minute to bloom flavors.
  5. Mix in tomato paste and cook for another minute before adding diced tomatoes and beef broth. Stir well.
  6. Add kidney beans and black beans; simmer uncovered for about 30–40 minutes until thickened.
  7. Taste and adjust seasoning if necessary before serving hot with desired toppings.
