  • 1 ½ pounds ground beef
  • 1 can kidney beans (15 oz), drained
  • 1 can pinto beans (15 oz), drained
  • 1 can black beans (15 oz), drained
  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 can fire-roasted tomatoes (15 oz)
  • 2 cups beef stock
  • 6 strips turkey bacon, chopped
  • 1 tablespoon oregano (dried)
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper (ground)
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • 1 tablespoon chili powder
  • 1 tablespoon garlic (minced)

Instructions

  1. In a large pot over medium heat, cook turkey bacon until crisp; remove and set aside.
  2. In the same pot, sauté onions and red bell pepper until tender.
  3. Add ground beef and cook until browned; drain excess grease.
  4. Stir in remaining ingredients along with three-quarters of the cooked turkey bacon.
  5. Allow to simmer on low heat for at least 45 minutes for enhanced flavor.
  6. Serve hot topped with sour cream, shredded cheese, cilantro, and the remaining bacon.
